Quick & Easy Healthy Dark Chocolate Banana Muffins

Do you ever make something so scrumptious that then when you walk back into the kitchen like an hour later……. EVERY LAST CRUMB of it is gone already?!?! With my family, these muffins were one of those things! This recipe was created quite awhile ago and is still one of my favorites! Which reminds me……. I haven’t made these in what seems like forever. Hmm, I think these muffins are going to be showing up on the Zanders’ kitchen table sometime pretty soon 🙂 So there’s not really a thrilling story behind how this muffin recipe was created….. It was one of those days when I was in a baking mood, but when searching through recipes, they all sounded SO bland and boring! Even everything on Pinterest, which normally looks amazing, just looked……. BORING! Soooooo, I finally just set down the cookbooks, closed Pinterest, and decided to go adventurin’.


On a side note, YES, you can totally go adventurin’ in your kitchen. Have I mentioned how much I like adventurin’? Actually, so much so, that I will call literally every. little. thing. an adventure……. Who cares that I just went to the store to buy milk! I was adventuring. And no one would ever know differently. 😉 Life is so much more enjoyable when you keep it interesting and “adventure” as much as possible. An adventure doesn’t have to be something out of this world amazing. Learn to find joy in the simplest, smallest things in life. Even something as simple as creating a yummy muffin recipe can be a wonderful, joy filled adventure if you choose to make it one!

Dark Chocolate Banana Muffin

Course Breakfast, Dessert, Snack

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes


  • 1 Cup Oats
  • 1 Cup Milk
  • 2 Cups Flour
  • 3/4 Cup Sugar
  • 3/4 Cup Cocoa Powder
  • 1 Cup Wheat Bran
  • 1/2 Cup Flax Seed
  • 2 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1 Tsp. Sale
  • 1/2 Cup Coconut Oil (Or Butter Melted
  • 2 Cups Bananas Mashed
  • 3 Eggs


  1. Preheat your oven to 350 degrees and line a muffin tin with baking papers.

  2. Combine oats and milk together in a small bowl and let sit for at least 5 minutes, until oats have softened.

  3. In a large bowl, mix together all of the dry ingredients: Flour, sugar, cocoa powder, wheat bran, flax seed, baking powder, baking soda, salt.

  4. Add the oat and milk mixture to the dry ingredients.

  5. Add the mashed bananas, coconut oil, and beaten eggs to the batter, and stir until well combined.

  6. Scoop batter into muffin tins lined with paper. (or well oiled)

  7. Bake at 350 for 15-20 minutes.

  8. ENJOY!!

If you don’t have these on hand, I would highly suggest getting them as soon as possible! We normally buy our flax seed, wheat germ, and other healthy dry goods at local bulk food stores; usually Amish owned. If that’s not an option where you live, well then I’ve got great news! Especially considering, that means you can skip the all day search & visiting 7 different  stores. Really, It’s a win-win!   • Yum! Let’s just say that I made some of these the second after I read this post😊 They smell so good! They are in the oven as I comment! Mom had me tested for my gluten allergy and I was clear (which means I can have gluten!) I am so excited I can finally try your recipes!!! I can’t wait to try one of these!

  • Okay so these muffins were done as soon as I posted my recent comment and my family and I thought they were AMAZING! Today I am making 2 dozen loaves of your oatmeal bread, 5 pounds of your granola, 8 dozen of these muffins, and a few of our family’s recipes, 2 dozen of our zucchini brownies (sounds weird but they are amazing! They are also very healthy), 10 dozen of our dark chocolate pumpkin muffins (we canned the pumpkin from our garden last summer), 5 dozen bread machine cinnamon rolls, homemade tortilla chips, and 2 pounds salsa. Sounds like a lot (and it is) but all that will only last our family a month or two since we have almost 20 mouths to feed! So I will be cooking and baking all day since I’m off work today!   • They sure do sound yummy! I’m more into eating than baking… but the hobby of eating drives me to baking, so I’m sure these will end up on our table in the near future.
