Well, this is where we insert these quick & easy healthy dark chocolate banana muffins. This recipe was created quite awhile ago and is still one of my favorites! Which reminds me……. I haven’t made these in what seems like forever. Hmm, I think these muffins are going to be showing up on the Zanders’ kitchen table sometime pretty soon 🙂 So there’s not really a thrilling story behind how this muffin recipe was created….. It was one of those days when I was in a baking mood, but when searching through recipes, they all sounded SO bland and boring! On a side note, YES, you can totally go adventurin’ in your kitchen. Have I mentioned how much I like adventurin’? Actually, so much so, that I will call literally every. little. thing. an adventure……. Who cares that I just went to the store to buy milk! I was adventuring. And no one would ever know differently. 😉 Life is so much more enjoyable when you keep it interesting and “adventure” as much as possible. An adventure doesn’t have to be something out of this world amazing. Learn to find joy in the simplest, smallest things in life. Even something as simple as creating a yummy muffin recipe can be a wonderful, joy filled adventure if you choose to make it one!

Dark Chocolate Banana Muffin
- 1 Cup Oats
- 1 Cup Milk
- 2 Cups Flour
- 3/4 Cup Sugar
- 3/4 Cup Cocoa Powder
- 1 Cup Wheat Bran
- 1/2 Cup Flax Seed
- 2 1/2 Tsp. Baking Powder
- 1/2 Tsp. Baking Soda
- 1 Tsp. Sale
- 1/2 Cup Coconut Oil (Or Butter Melted
- 2 Cups Bananas Mashed
- 3 Eggs
Preheat your oven to 350 degrees and line a muffin tin with baking papers.
Combine oats and milk together in a small bowl and let sit for at least 5 minutes, until oats have softened.
In a large bowl, mix together all of the dry ingredients: Flour, sugar, cocoa powder, wheat bran, flax seed, baking powder, baking soda, salt.
Add the oat and milk mixture to the dry ingredients.
Add the mashed bananas, coconut oil, and beaten eggs to the batter, and stir until well combined.
Scoop batter into muffin tins lined with paper. (or well oiled)
Bake at 350 for 15-20 minutes.
